I’m a Vegan, but I’ve Got a Jones for a Burger!

Black-eyed Pea Patties

Although I’m a vegan, I still like an occasional meatless burger, so today I’m sharing Black-eyed Pea Patties! I’m not the first to make these, but I’ve added my own twists.

I eat a lot of raw foods, but I understand that this isn’t for everyone. While most of the recipes in the AYGET? blog will be vegan-vegetarian, some of them will be baked or lightly fried. There are folks out there are trying to make the transition to vegetarian or vegan, and it’s not easy. Making foods that are familiar help a good. But I can say that all of the recipes AYGET? offers will be as healthy as possible!

My wife and I love BPPs! So what do you need make them?

-2 cups black-eyed peas (can or cooked––it takes a little longer, but I like to cook mine)

-1/2 teaspoon cumin

-1/2 teaspoon turmeric

-1 teaspoon of minced garlic

-1/2 sea salt (I really dig pink himalayan salt)

-1/4 cup sweet onion (This is optional)

-Flax meal, almond meal (for coating)

-Hamburger buns (I like vegan, gluten-free)

-Sliced tomato, romaine lettuce, condiments of your choice

Directions:

Cook or heat the peas with salt, cumin, and turmeric until tender. Don’t let them get too mushy. Let them cool a bit. Place them in a bowl and mash them with a fork. It’s okay if some of the peas are whole. Add onions and garlic and mix together.

Shape them into patties. Batter patties with the flax/almond meal. Brown lightly in a skillet with oil (I like high heat oils like avocado, safflower, etc.). Place the burgers on a bun with lettuce, tomatoes, and condiments. Enjoy!

Time: 1.5 hour (much less if you use canned beans)

Serves 6 to 8 (depending upon the size of the patties)
